清蒸深水泥鯭:

材料:
深水泥鯭2條
果皮1片
薑絲少許
辣椒仔1隻
蔥1條

處理:
1. 果皮,清水浸軟。
2. 魚,搣去鰓,清洗乾淨,擎乾水。
3. 辣椒仔,切粒。
蔥,切絲。
薑,切絲
4. 薑絲,放魚肚及魚面。
5. 果皮,去囊,清水洗淨,切絲,放在魚肚及魚面。

處理:
1. 大火煲滾1鑊水。
2. 大火蒸魚12分鐘。
3. 魚蒸好,倒去魚汁。
4. 放蔥粒及辣椒粒上魚面。
5. 灒滾油在魚上。
6. 再倒去碟上水分。
7. 加入生抽。
8. 完成,可享用。

Steam mottled spinefoot:

Ingredients:
Mottled Spinefoot 2 Nos.
Dried orange peel 1pc
Shredded ginger little
Chili 1 No.
Green onion 1 pc

Preparation:
1. Dried orange peel, soak in tap water..
2. The fish, remove intestines, rinse thoroughly and hang dry.
3. Chili, dice in cubes.
Green onion, get it shredded.
Ginger, get it shredded.
4. Put ginger in stomach and top of fish.
5. Dried orange peel, rinse and get it shredded. Put inside and top of fish.

Steps:
1. Heat up a wok of water at high flame.
2. Steam the fish at high flame for 12 minutes.
3. Fish has been steamed well. Pour away water on plate.
4. Put green onion and chili on top of fish.
5. Pour hot oil on top of fish.
6. Pour away water on plate of fish.
7. Add light soya sauce.
8. Complete. Serve.
